The CCD sensors in Hubble's Wide Field/Planetary Camera turn the light energy gathered by the telescope into a digital signal. A digital signal is a series of electronic pulses that is based on the pattern of light that fell on the electronic sensor.
Once the Galaxy's light is turned into a digital signal, it is stored in one of Hubble's electronic recorders.
